Unsafe at Any Meal: What the FDA Does Not Want You to Know About the Foods You Eat, by Dr. Renee Joy Dufault

Review

"Dufault, a former Food and Drug Administration investigator, criticizes the levels of mercury and other chemicals present in commonly consumed foods. She portrays a federal food safety system rife with ineffective regulations and practices that have left an unknowing American public vulnerable to food contaminants. Citing both her own research and others' studies, Dufault contends that the consumption of these contaminants, mainly through processed foods, contributes to the prevalence of common American illnesses. Dufault is scathing about food labeling that omits mentions of mercury, arsenic, or other contaminants that can be found in foods as a result of production. She cites the addition of mercury-containing chemicals to high-fructose corn syrup to regulate acidity and increase shelf life. Moreover, she argues that exposure to even government-allowed amounts of contaminants can impact gene regulation and function and contribute to disease. To combat these dangers, Dufault prescribes a diet low in processed foods and high in organic food, vitamins, and nutrients. Her work leaves readers with a disquieting picture of current American food safety standards." (Publishers Weekly)"Previously working for the National Institutes of Health, Environmental Protection Agency, and Food and Drug Administration (FDA), Dufault offers an illuminating perspective on food safety in America, presenting the information in an easy-to-understand manner and providing definitions where necessary for laypeople. Chapters cover a variety of topics ranging from genetics and adult-onset diseases and pesticides and heavy metals to Western diets and the FDA's food labeling practices." (Carolann Curry, Mercer Univ. Lib., Macon, GA Library Journal)"Each year, Americans consume hundreds of food products that contain truly dangerous compounds, including heavy metals, pesticides, and other harmful additives - with the blessing of the FDA. Why is this happening and why haven't you heard about it? In Unsafe at Any Meal, Dr. Renee Dufault, former food investigator for the Food and Drug Administration, provides the startling answers . . . [it] warns readers about commonly eaten foods that can possess heavy metals (such as lead or mercury, the consumption of which can contribute to conditions such as ADHD or autism), explains food labeling in plain terms, offers guidelines for a nutritionally balanced diet, and much more. Extensive references and an index round out this 'must-have' for health-conscious consumers. Highly recommended!" (Midwest Book Review ("Cowper's Bookshelf"))"Written in clear and understandable language, Unsafe at Any Meal begins by telling Dr. Dufault's story. It then describes all of the heavy metals and toxic chemicals found in our present food supply and how each can impact our health. Just as important, it offers practical suggestions on how to avoid these foods in our daily diet . . . I hope that, as healthcare professionals, you will grasp the opportunity to read this groundbreaking book, which may hold the answers to why we remain in the midst of such a devastating national health crisis." (Dr. Earl Mindell, RPh, MH, PhD Townsend Letter for Doctors & Patients)"Alarmingly relevant . . . [a] former environmental health officer for the National Institutes of Health, the Environmental Protection Agency, and the Food and Drug Administration, [author] Dufault's intimate understanding of the U.S. food regulatory system and its consequences for human health make her an ideal guide for understanding . . . Dufault emphasizes the role that mercury and other toxins play in human physiology . . . look[s] at the corrosive relationship between government regulators and the food industry. Especially useful are [Dufault's] comparison between the U.S. and European food agencies . . . Drawing on government reports, public health data, and nonprofit research organizations (including her own, the Food Ingredient and Health Research Institute), Unsafe at Any Meal is a clear and well-researched alarm bell . . . a solid introductory text to the many problems of the modern American food system." (Richard Marcil for IndieReader IndieReader)"Unsafe at Any Meal is a unique and convincing contribution to the field of nutrition science and to the discussion on the industrialization and politicization of the food supply. While most books on this topic address the importance of avoiding toxic metals and pesticides, Dufault goes one giant step further and takes the reader on an investigative journey to uncover exactly how these substances get in our food, where they are lurking, and what the latest research reveals that they do over time . . . Even if you already eat a whole-foods, organic diet, there is much new and critical information to be found here." (Zachary R. Taylor, MA, LPC Price-Pottenger Journal (Vol. 41, No. 4) / Winter 2017-18)"[Dufault's] book is a sobering read, but Dufault does an admirable job making pesticide data and gene expression grippingly relevant. If you're wondering why we're not paying more attention to food supply and regulation as chronic disease conditions and healthcare costs skyrocket, this is a summer read for you." (Environmental Health News (EHN))"Makes a very compelling case regarding the Standard American Diet (SAD) and how it can lead to autism, Attention Deficit Disorder (ADHD), and Alzheimer's disease. It even appears that it may be possible to reverse some of the effects of those conditions by changing our diet . . . well-written and not too academic . . . we think it is an important book . . . should be made required reading for all high school students. A few hundred congressmen should also read this book." (Suzanne & David McClendon P.S. Annie! Blog)

read this book looking for new sources of toxins I might not know about. The chapter on heavy metals was especially useful containing information on impurity levels of food colors and additives. For example, vitamins and supplements contain titanium dioxide with the allowable impurities of arsenic, lead and mercury. No wonder the incidence of liver disease related to supplements is increasing. These metals displace zinc from the metal carrier protein metallothionein and lead to zinc loss in the body resulting in inflammation at many sites. Low zinc status has been associated with Alzheimer’s, autism, and type 2 diabetes.  I was interested to find that there are actions the FDA can take to improve public health. One of the more prominent examples from the book is the potential action of simply banning the use of food ingredients or processing aids known to contain heavy metals. I would have thought having FDA implement a ban would have been impossible until I learned that in 2013 the FDA determined that artificial trans fats should be removed from the food supply. If the FDA can do that it can also ban ingredients with heavy metals. I found the suggestion encouraging as it offered me a ray of hope.  In general, the book was uplifting rather than discouraging. It offered me suggestions on how to improve my own diet and hope for the future of public health.  Raquel Crider, Ph.D.  a 30 year veteran of the US Public Health Service, retired.Harry Burns

I really like this book. It will change the way you eat, and for the better.

I have been keeping up with Dr. Dufualt's research for years. She brings food consumer awareness to the public about our food supply and how food public policy regulations work. It's a great read!!!!! Dr. Zara Berg

one very interesting book filled with facts every sick or healthy person should know. Taught me a thing or two... a dam shame every pregnant woman did not read this years ago. She backs up what she says with many references but much of what she says is very common seance

Great book!

I highly recommend this well written, extremely informative. This book should be read by everyone who cares about their health

Very informative.

Dr. Dufault blows the whistle on the FDA's failure to alert the public about the toxins, chemicals and other substances present in today's fast food, highly processed and convenience food diet and take a wide-ranging examination of how it affects the health of every member of the family. This is valuable information for individuals of any age to know about in order to make smarter food and menu choices, but especially for parents raising children to help avoid unwanted health consequences. If it's true that food is your medicine, you owe it yourself to be certain that what you are serving on your plate isn't poison instead!

This is a nice book especially for a beginning welder. It covers a lot of instruction for welding. My husband is an experienced welder so that part was a waste for us. We have horses and buckets of used horse shoes. The book does have several neat projects that are expertly explained and illustrated. It has given us several ideas to make some very nice projects.

Beautifully well-done!! Barbie covers the topic well, and when you're done reading the book, be sure to check out her media channels. You'll find at least ONE project in this book that speaks to you. Also, how to make letters from horseshoes is important if you didn't already know how to do it. Be honest, most of us don't know how to make every single letter from horseshoes. The pages are glossy and thick. Everything about this book is high-quality. Thanks, Barbie!!!

I make horse shoe art & this book has some very good ideas. The projects are fairly easy & well explained. I liked the simple DIY way each project was laid out. Good for anyone novice.

Great book! Nice photos and easy to understand. My son has already made several of the projects featured in this book and they have turned out beautifully!

Great ideas and instructions.

I like all the horseshoe alphabet letters.

Book is awesome

have already built the pumpkin three times, for my wife, daughter & daughter-in-law. they love em

Excellent book for tourists and those who wish to explore Guyana. It's detailed with alot of information about where to visit, history, where to eat, where to stay and much more. I've found it useful on my journeys throughout this region. Highly recommended.

I purchased this specific travel guide in preparation for a trip to Georgetown this summer (2008). I found it to be both educational, timely (January 2008 copyright date),authentic and insightful from the author's personal narrative and perspective about this unique South American country. I also wanted to add some of the perceived "typos" mentioned by the previous reviewer are possibly not really typos for those of British or European backgrounds, I believe it is how they form and spell specific word patterns in their country, for example...realised (European) in the USA is spelled "realized" or enquiry (European) in USA is spelled "inquiry"Callie Wilder

If you are going to Guyana, get this book. When you get to Guyana relax over a cappuccino and enjoy the lunch buffet at the Oasis, then get out of Georgetown and get into the interior. (Don't forget to bring steel leader if you plan on fishing, the piranha bite through regular leader like it wasn't even there).

This is the first Bradt travel guide I have purchased and the standard is excellent, Better than any other travel guide I have purchsed for any other country. The author writes very well, has actually lived in the place, and has taken the trouble to visit just about everywhere he describes. I purchased separately a map by another publisher and it was lousy and a waste of money. The maps in the Bradt guide are excellent and show every single place you might want to visit. A travel guide for Guyana can hardly be a great commercial proposition and Bradt are to be congratulated for taking such a brave decision.

This is a great book because it covers the history, tradition, food, biodiversity, among other things from Guyana. It is illustrated with maps, photographs and drawings. I liked this book because I am planning on traveling to Guyana and this guide helped me plan my trip. It even has a section with drawings for animal tracks that you might see in the forest. I recommend it

Ok

Just got back from Guyana, a broken country. Used Kirk's guide book, excellent coverage, but too charitable/not realistic enough about the country. Georgetown is a dump, but the guide dodges around this fact. This book was written in '07, but it doesn't seem much has changed in the last 4 years. (I notice an '011 edition is just out, btb.) Pretty indicative of the progress, or lack thereof, in this country.A few quibbles. If you go to Guyana, bring binoculars! Nowhere does Kirk mention this. Also, no advice at all on tipping. It would have been useful. And finally, I really don't know why the Canopy Walkway is so highly rated. Practically a waste of time. A stay at the IwoKrama Field Station is a thousand times better, as well as a stay at Rockview. Skip the canopy walkway unless that is going to be your only time in the rain forest.

This is the first guidebook that treats Guyana separately as a country, and is very well researched. There is no contest between this and other guidebooks -- the level of detail and coverage of the country is unmatched when compared to the Lonely Planet's "South America on a Shoestring", the only other guidebook I know that covers Guyana well. This book is a must have for anyone visiting or moving to Guyana. My only gripe with the book is that there is the occasional typo that can be annoying.

“One of the great travel destinations in the world is the Great Barrier Reef. The planet's largest coral reef system, the Great Barrier Reef in the Coral Sea stretches over 1,400 miles and features some 900 islands. Author Ulrike Lemmin-Woolfrey suggests the best diving locations as well as the best choices for cruising the reef (whether organized, private or doing it yourself). Sydney in all its splendor takes up a big chunk of the book too: its culture, nightlife, shopping, dining and, of course, beaches. The book concludes with a wildlife guide (sea life, mammals, reptiles, birds and insects) and a backgrounder section on Australian cultural values: Australia prides itself as being the land of the ‘fair go,’ or giving someone a chance.”—The Chicago Tribune

Used this as part of our trip planning to Sydney and Cairns. Information was spot on, and allowed the trip to go much more smoothly.

We just used this for a 3 week road trip in this area. So many great suggestions!

Great guide that helped us a lot on out trip to Australia this July. Excellent suggestion to tour Sydney and great recommendations of touring the east coast.

We're going there and this will be most helpful.

Good starting point to research our trip.

Being a follower of Ulrike’s blog with the insight into ex-pat life around the globe and wry life-style commentaries the gift of a travel book by her would be sure not to disappoint. The first few pages whet the appetite and have you booking your flight.Sydney and The Great Barrier Reef, what do I need to plan, where should I go as this is such a big area, I’ll never see it all – this is an excellent guide written by a traveller, for travellers, leaving you dashing to pack your case. Each area recommended is described with the enthusiasm of a traveller but the knowledge of a resident, reading this book before you go will ensure you feel like a local on arrival. As well as taking you to all the major attractions and smaller one’s off the beaten track there is also ample information on the day to day necessities such as car-hire, public transport, cost of eating out and an idea how much those holiday treats and purchases will set you back so you can plan your budget as well as where you’ll be visiting.Of course as well as the beautiful scenery you’ll also want to experience the flora and fauna – the guide takes you to wild country and also city parks giving good descriptions of the native wildlife and where to see them, also if needed, where to avoid if you’re not keen on encountering funnel-web spiders!Towards the end of the book, as by now you’ll be wanting to emigrate or at least take a year off to travel, you can find out (if this offer is made again) how to apply for one of “the best jobs in the world” in this exciting country. All in all a valuable guide which will help you make the most of your time in this part of Australia.

Older version but has all the info I needed.
