About the Author
Dr. Renee Joy Dufault became a medical laboratory specialist when she joined the U.S. Army in 1976. Following her four-year service, she went on to earn a Bachelor of Science degree in Environmental Policy Analysis and Planning at the University of California at Davis. She then served in the Navy for two years as an Industrial Hygiene Officer, before transferring to the Public Health Service (PHS), where she served as an Environmental Health Officer. During her fourteen years at the PHS, she worked at the National Institutes of Health, the Environmental Protection Agency, and the Food and Drug Administration, where she provided expertise in the areas of toxicology, environmental health, and industrial hygiene. Since her retirement, Dr. Dufault went on to earn a doctorate in Health Education. In addition, she is the founding Executive Director of the Food Ingredient and Health Research Institute (FIHRI), and, as such, collaborates with scientists worldwide to conduct studies and publish papers focused on the many toxic substances still contained in our present food supply. A popular world-wide speaker, Dr. Dufault has had numerous articles published in peer-reviewed journals. She currently resides in Hawaii.

read this book looking for new sources of toxins I might not know about. The chapter on heavy metals was especially useful containing information on impurity levels of food colors and additives. For example, vitamins and supplements contain titanium dioxide with the allowable impurities of arsenic, lead and mercury. No wonder the incidence of liver disease related to supplements is increasing. These metals displace zinc from the metal carrier protein metallothionein and lead to zinc loss in the body resulting in inflammation at many sites. Low zinc status has been associated with Alzheimer’s, autism, and type 2 diabetes.  I was interested to find that there are actions the FDA can take to improve public health. One of the more prominent examples from the book is the potential action of simply banning the use of food ingredients or processing aids known to contain heavy metals. I would have thought having FDA implement a ban would have been impossible until I learned that in 2013 the FDA determined that artificial trans fats should be removed from the food supply. If the FDA can do that it can also ban ingredients with heavy metals. I found the suggestion encouraging as it offered me a ray of hope.  In general, the book was uplifting rather than discouraging. It offered me suggestions on how to improve my own diet and hope for the future of public health.  Raquel Crider, Ph.D.  a 30 year veteran of the US Public Health Service, retired.Harry Burns

I have been keeping up with Dr. Dufualt's research for years. She brings food consumer awareness to the public about our food supply and how food public policy regulations work. It's a great read!!!!! Dr. Zara Berg
one very interesting book filled with facts every sick or healthy person should know. Taught me a thing or two... a dam shame every pregnant woman did not read this years ago. She backs up what she says with many references but much of what she says is very common seance

Dr. Dufault blows the whistle on the FDA's failure to alert the public about the toxins, chemicals and other substances present in today's fast food, highly processed and convenience food diet and take a wide-ranging examination of how it affects the health of every member of the family. This is valuable information for individuals of any age to know about in order to make smarter food and menu choices, but especially for parents raising children to help avoid unwanted health consequences. If it's true that food is your medicine, you owe it yourself to be certain that what you are serving on your plate isn't poison instead!
